The number of Oregon inmates living with diabetes is expected to increase with the aging inmate population and the obesity epidemic. To reduce risk for chronic disease, the Healthy Food Access Project (HFAP) was implemented in the minimum-­‐security facility at Coffee Creek Correctional Facility (CCCF) to improve nutrition for female inmates and teach them food-­‐related skills by: 1) expanding the prison garden, 2) education and skills training, and 3) reducing prison menu by 800 calories a day (3,000 to 2,200).
