Abstract

Food insecurity is present in more than 11% of U.S. households and is significantly correlated with increased risk of chronic cardiometabolic disease states and overall mortality. This correlation is explained via a few different biological pathways and underscores the importance of providing consistent, early access to an adequate amount of nutritionally complex foods. Disparities in access to healthy, consistent food resources is a key determinant of health and intimately linked to adverse health outcomes, chronic disease and inequality within the healthcare system. The creation of a sustainable food system and infrastructure is possible through legislation, federal and state programs, and community organization, and can lead to a healthier population.
