Osteocalcin, a bone‑derived protein, may influence glucose regulation, adiponectin levels, and pancreatic β‑cell activity, with its undercarboxylated form potentially acting as an endocrine hormone. Dietary composition may affect both total and undercarboxylated osteocalcin, yet the acute impact of different macronutrient patterns remains unclear. This randomized crossover study examined postprandial responses to low‑carbohydrate (LC) versus high–complex carbohydrate (HC) meals in ten healthy adults. Participants completed two three‑day run‑in periods followed by LC or HC test meals, with hourly blood sampling to measure total and undercarboxylated osteocalcin via ELISA. Findings may help clarify dietary effects on osteocalcin and support nutrition interventions for obesity, osteoporosis, and diabetes.
